Blueberry Pie with no roll crust

Crust:
1 1/3 c flour
1/2 tsp salt
1 tbsp sugar
1/2 c unsalted butter (room temp)
1 egg yolk plus ice cold water
Additional 1 tbsp flour
Mix butter into dry ingredients (you can use your hands).  Then separate an egg (save the white) and put the yolk in a 1/4 cup and fill it to the top of the 1/4 with ice cold water.  Pour this into the crumbly flour/butter mix and form into dough.  Press into bottom of 9 - 10" pie pan with your hands. Then sprinkle crust with 1 tbsp of flour.
Filling:
Four cups of blueberries
1 egg white
Beat egg white until stiff and add blueberries to the stiff egg white.  Spread over crust.
Topping:
1/2 c flour
1/2 c sugar
1/4 (1/2 stick) butter
Cut butter into flour/sugar mixture and sprinkle on top of filling
Bake at 400 for 40 - 45 min
